Ingredients

  • 8 ounces bacon, chopped and uncooked
  • 4 ounces pickled jalapeños, chopped
  • 2 cloves garlic, minced
  • 4 cups corn, cut from the cob
  • 1 cup mayonnaise
  • 4 green onions, chopped
  • 2 cups mozzarella cheese, shredded and divided
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon pepper, or to taste
  • tortilla chips, for serving

Directions

Step 1 –Preheat the broiler on high.

Step 2 –In an oven-safe skillet, add the chopped bacon and cook until brown and crispy.

Step 3 –Stir in the jalapeños and garlic, cooking until the garlic is fragrant, about 30 seconds.

Step 4 –Stir in the corn, cooking and stirring until the corn looks golden and chars.

Step 5 –Add the mayo, green onions, and 1 1/2 cups of the mozzarella cheese. Stir well and add salt and pepper to taste.

Step 6 –Sprinkle the remaining mozzarella cheese on top.

Step 7 –Place the skillet in the broiler, and allow it to cook until golden brown, about 3-5 minutes.

Step 8 –Serve with tortilla chips!
