Ingredients

  • 2 cups all-purpose flour, plus more for sprinkling and dusting a work surface
  • 1 teaspoon kosher salt
  • 1 teaspoon instant yeast
  • 3/4 cup water, lukewarm
  • 1 tablespoon olive oil, plus more for drizzling

Directions

Step 1 –Whisk together the flour, salt, and yeast.

Step 2 –Add the water and the olive oil, stirring with a spatula until a dough forms. The mixture should appear dry and unevenly combined.

Step 3 –Continue to mix the dough with your hands briefly until all of the flour is absorbed.

Step 4 –Drizzle the olive oil over the top of the dough and turn the dough to coat.

Step 5 –Cover the mixing bowl with a towel and place in a warm spot in your kitchen to rise for about1 hour 30 minutes.

Step 6 –Preheat the oven to 550 degrees F with a baking sheet or pizza stone inside on the top rack.

Step 7 –Lightly flour a work surface.

Step 8 –Turn the dough out on the floured surface and separate it into 6 equal portions.

Step 9 –Roll the 6 portions of dough into balls and flatten each of them again with a rolling pin.

Step 10 –Cut 6 pieces of parchment paper and transfer each piece of dough onto the 6 pieces of parchment paper. Let the dough rest for 15 minutes.

Step 11 –Once the oven is preheated, ideally using a pizza wheel, shimmy the pita on the parchment paper to the pizza stone or baking sheet. Do not cook more than 3 at a time.
