Ingredients

  • 1/4 pound sliced bacon, diced
  • 3 pounds of beef stew meat, cut into 1-inch cubes
  • 1 cup onion, chopped
  • 1 1/2 cups fresh baby carrots, halved
  • 6 tablespoons all-purpose flour, plus more for a workspace
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 (10-ounce) package of frozen peas
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 sheet refrigerated pie crust
  • 1 large egg, lightly beaten, optional

Directions

Step 1 –In a dutch oven, cook the bacon over medium heat until crisp.

Step 2 –Transfer the cooked bacon to a paper towel-lined plate to drain.

Step 3 –Brown the beef in the bacon drippings in batches.

Step 4 –Drain the excess grease from the beef and set it aside.

Step 5 –Add the onion to the same pan and sauté until crisp and tender.

Step 6 –Add the carrots, cooked bacon, and browned beef to the onions.

Step 7 –While the meat and veggies are cooking, in a small bowl, combine the flour, broth, and Worcestershire sauce until smooth.

Step 8 –Add the broth mixture to the beef mixture and bring it to a boil.

Step 9 –Lower the temperature to low-medium, cover the beef mixture and simmer until the meat is tender, for about 1-1 1/2 hours.

Step 10 –Stir in the peas, salt, and pepper.

Step 11 –Preheat the oven to 375 degrees F.

Step 12 –Transfer the tender beef mixture to an ungreased 11×7-inch baking dish.

Step 13 –On a lightly floured surface, roll the pie crust out into a 12×8-inch rectangle.

Step 14 –Cut slits in the middle of the crust for venting.

Step 15 –Place the crust over the beef mixture, trimming and sealing the edges.

Step 16 –Brush the trimmed crust with the beaten egg.

Step 17 –Bake until the crust is golden and the filling is bubbly, for about 35-40 minutes.

Step 18 –Let the beef pie stand for 15 minutes.

Step 19 –Slice and serve.
