Ingredients
- 1 1/2 pounds beef stew meat, cut into 3/4-inch cubes
- 2 cups salsa
- 1 tablespoon brown sugar
- 1 tablespoon reduced-sodium soy sauce
- 1 clove garlic, minced
- 4 cups brown rice, cooked and warm, for serving
- jalapeño peppers, optional, to taste, sliced, for serving
Directions
Step 1 –In a 3-quart slow cooker, combine the beef, the salsa, the brown sugar, the soy sauce, and the garlic.
Step 2 –Cover and cook on low until the pieces of beef are tender, about 8-10 hours.
Step 3 –Using a slotted spoon, plate the beef with the rice and top with the sliced jalapeño peppers.
