Antojitos

Antojitos translates to “little cravings” and can refer to any sort of delicious street food or afternoon snack. These Antojitos are a tasty introduction to the culinary concept; rolls of tortillas surrounded by a creamy, tangy filling of bright vegetables, sharp cheese, and spicy hot sauce, and then baked until melty and bubbly. Ingredients

  • 1 (8-ounce) package brick-style cream cheese, softened
  • 2 tablespoons sour cream, plus more, to taste, for serving
  • 1 cup cheddar cheese, shredded
  • 1/2 teaspoon hot sauce, plus more, optional, to taste
  • 1/2 red bell pepper, finely chopped
  • 2 jalapeƱo peppers, seeded and chopped
  • 1 green onion, finely minced
  • 4 large tortillas

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Place a cast-iron skillet in the oven while it preheats, so the skillet is hot and ready.

Step 3 –Use an electric hand mixer to blend the cream cheese, 2 tablespoons of the sour cream, the cheddar cheese, the hot sauce, the red bell pepper, the jalapeƱos, and the green onion together.

Step 4 –Spread the cream cheese mixture on one of the tortillas, leaving about a 1-inch perimeter around the edges to prevent the filling from seeping out. Repeat with the remaining tortillas.

Step 5 –Tightly roll the tortillas up and score the surfaces with a serrated knife in 1-inch diagonal slices.

Step 6 –Cut the score lines all the way through.

Step 7 –Arrange the antojitos on the prepared cast-iron skillet.

Step 8 –Bake the antojitos, flipping halfway through, about 10-12 minutes.

Step 9 –Switch the oven to broil and cook until the antojitos are hot and bubbly, about 2-3 minutes.

Step 10 –Cool the antojitos, about 2-3 minutes.

Step 11 –Serve the antojitos with the sour cream.
