Don’t worry, carnivores! The Healthy Egg Bake has plenty of crispy, succulent bacon bites in the fluffy bed of hearty eggs! It also has so many bright, vibrant peppers and savory onions mixed in that it nourishes your body while it stuns your taste buds! This is a simple egg dish that wows with flavor and supports your health goals!

Ingredients

  • 6 ounces bacon, diced (about 5 slices)
  • 1 teaspoon garlic, minced
  • 1 cup onion, finely chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 12 eggs
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon pepper
  • 1 cup cheddar cheese, shredded

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a large skillet over medium heat, cook the diced bacon until it just starts to pick up color, about 2 minutes.

Step 4 –Add the minced garlic and the onions to the bacon and cook, while stirring, until the bacon begins to brown, about 2 minutes.

Step 5 –Add the red peppers and the green peppers and cover the skillet.

Step 6 –Cook, while stirring occasionally, until the veggies are soft and the bacon is fully-browned and crispy, about 5-10 minutes.

Step 7 –Transfer the skillet from the heat and let it cool.

Step 8 –In a medium bowl, add the eggs, the salt, and the pepper and whisk to combine.

Step 9 –Add the cooled bacon-veggie mixture to the beaten eggs and stir to combine.

Step 10 –Add the cheese and stir to combine.

Step 11 –Pour the egg mixture into the prepared baking dish.

Step 12 –Bake until the top is set and is slightly browned, about 25-30 minutes.

Step 13 –Cool the casserole for 5 minutes.

Step 14 –Serve warm.
