Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 1/4 cups celery
- 1/2 cup shallots
- 1/4 cup garlic, minced
- 1/4 teaspoon kosher salt
- 8 cups vegetable or chicken broth
- 3 cups broccoli florets
- 3 cups spinach, optional, chopped
- 1 cup mushrooms, sliced
- 1 cup orzo
- basil pesto, to taste, store-bought or homemade
Directions
Step 1 –In an 8-quart saucepot over medium heat, add the olive oil.
Step 2 –Add the celery, the shallots, the garlic, and the salt to the hot oil and cook, while stirring, until golden, about 8 minutes.
Step 3 –Add the broth and the broccoli and heat the mixture over high heat until it begins to simmer.
Step 4 –Reduce the heat to medium-low and simmer, while stirring occasionally, until thickened slightly and the broccoli is very tender, about 15 minutes.
Step 5 –Add the spinach, the mushrooms, and the orzo and simmer until the mushrooms and the orzo are softened, about 8-10 minutes.
Step 6 –Transfer the pot from the heat.
Step 7 –Stir in the pesto and serve.
