Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken breast, boneless and skinless, cut into bite-size pieces
  • 2 cloves garlic, minced
  • 1 (14.5-ounce) can diced tomatoes
  • 14 ounces spaghetti sauce
  • 2 ounces cream cheese
  • 1 (9-ounce) package fresh spinach leaves, chopped
  • 1 1/2 cups multigrain penne pasta, cooked
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons parmesan cheese, grated

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Over medium-high heat in a large skillet, heat the oil.

Step 3 –Add the chicken pieces to the oil and cook until both sides are browned, about 3-5 minutes. It’s okay for them not to be cooked all the way through at this point.

Step 4 –Transfer the chicken pieces from the pan.

Step 5 –Add the garlic to the skillet and cook until fragrant, about 1 minute.

Step 6 –Add the diced tomatoes and the spaghetti sauce to the garlic.

Step 7 –Add the cream cheese to the sauce mixture and stir until it melts into the sauce.

Step 8 –Add the spinach to the sauce mixture and stir to incorporate.

Step 9 –Add the chicken and the pasta to the sauce and stir to combine.

Step 10 –Spoon the pasta mixture into a 2-quart casserole dish or an 8-inch baking dish.

Step 11 –Top the pasta mixture with the mozzarella and the parmesan.

Step 12 –Bake the pasta mixture until the chicken pieces reach an internal temperature of 165 degrees F, about 20 minutes.

Step 13 –Serve.
