Do you believe in great meatballs? Cher does, and you can tell when you try a bite of Cher’s Meatballs! Ultra tender and juicy, with a slight hint of ginger to help accent the beefy flavor, Cher’s Meatballs would have been a prize all on their own. But then they decide to go full Dancing Queen and add a sweet, tangy, thick sauce with bits of tropical pineapple and green pepper tossed in! That’s the Way of Love if ever we heard (or tasted) it!
Ingredients
- 2 1/2 pounds ground beef
- 1/2 cup onion, minced
- 1 egg
- 1 cup breadcrumbs
- 2 tablespoons salt
- 1/2 teaspoon ginger
- 1/2 cup milk
- 1 1/2 tablespoons shortening
- 2 1/2 tablespoons cornstarch
- 3/4 cup brown sugar, packed
- 1/2 cup vinegar
- 2 tablespoons soy sauce
- 2 (13.5-ounce) cans pineapple tidbits, drained and syrup reserved
- 1/2 cup green pepper, chopped
Directions
Step 1 –Preheat the oven to low heat.
Step 2 –Combine the beef, the minced onion, the egg, the breadcrumbs, the salt, the ginger, and the milk in a large bowl gently, but thoroughly.
Step 3 –Shape the mixture into balls.
Step 4 –Melt the shortening in a large skillet.
Step 5 –Cook the meatballs in the shortening until browned and cooked through at 145 degrees F internally, about 5 minutes per side.
Step 6 –Place the meatballs on a baking sheet and place them in the oven to keep warm.
Step 7 –Drain the fat from the skillet.
Step 8 –In a bowl, mix the cornstarch, the brown sugar, the vinegar, the soy sauce, and the reserved pineapple syrup until the mixture is smooth.
Step 9 –Pour the sauce mixture into the skillet and cook it over medium heat, stirring frequently, until the mixture becomes thick and is boiling.
Step 10 –Continue to boil and stir the sauce for 1 minute.
Step 11 –Add the meatballs, the pineapple bits, and the green pepper to the sauce and heat through completely.
Step 12 –Serve.
