BBQ Chicken Casserole

BBQ Chicken Casserole takes the tastes of the summer cookout and pours them into a comforting casserole. Juicy chicken slathered in sweet and smoky barbecue sauce is nestled on top of creamy, cheesy, and tangy mashed potatoes; it gets everyone’s mouths watering just thinking about it! Topped with crispy bacon, BBQ Chicken Casserole is perfect served with hearty greens for the full cookout experience. And it comes together in just 45 minutes!

Ingredients

  • 2 cups water
  • 3 tablespoons butter
  • 1 (4-ounce) package roasted garlic mashed potato mix
  • 3/4 cup sour cream
  • 1 1/2 cups cheddar cheese, shredded, divided
  • 3 cups rotisserie chicken, chopped
  • 1 (12-ounce) bottle barbecue sauce, of your choice
  • 1/2 cup green onions, chopped, divided
  • 6 slices bacon, crisply, cooked and crumbled

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 2-quart baking dish with cooking spray.

Step 3 –Bring the water and the butter to a boil in a large saucepan.

Step 4 –Remove the saucepan from the heat.

Step 5 –Stir in the mashed potato mix.

Step 6 –Add the sour cream and 1 cup of the cheese, stirring until fully incorporated.

Step 7 –Spoon the mashed potato mixture into the prepared baking dish.

Step 8 –Combine the chicken, barbecue sauce, and 1/4 cup of the green onions in a large mixing bowl.

Step 9 –Spoon the chicken mixture over the potatoes.

Step 10 –Top the casserole with the bacon and the remaining cheese.

Step 11 –Place the dish in the oven and bake until the cheese is melted and the edges are bubbling, about 20-25 minutes.
