Beef Fajita Casserole

Fajita-seasoned beef is joined with tangy salsa, then merged with some flour tortillas and melted Mexican-style cheese for a taste extravaganza that tops your normal fajita route. Ingredients

  • 1 pound lean ground beef
  • 1 Vidalia or Mexican onion, chopped
  • 1 small green bell pepper, chopped
  • 1 orange bell pepper, chopped
  • 2 cloves garlic, finely minced
  • 1 (1-ounce) package fajita seasoning mix
  • 1 cup water
  • 1 cup salsa, store-bought or homemade
  • 4 soft taco flour tortillas, cut into 1 1/2-inch-wide squares
  • 1/2 cup Mexican blend cheese, shredded
  • cilantro, to taste, chopped, for garnish

Directions

Step 1 –In a large skillet over medium-high heat, add the beef and cook, while crumbling, until it is no longer pink, about 5-7 minutes.

Step 2 –Drain the excess grease and return the beef to the skillet.

Step 3 –Reduce the heat to medium. Add the onion, the green bell pepper, the orange bell pepper, and the garlic to the beef and cook, about 5 minutes.

Step 4 –Add the fajita seasoning mix, the water, and the salsa to the beef mixture and bring to a boil, stirring frequently.

Step 5 –Reduce the heat to medium-low and bring the beef mixture to a medium simmer.

Step 6 –Cover the skillet and let the beef mixture simmer, about 5 minutes.

Step 7 –Add the tortilla squares to the ground beef mixture and stir to combine. Cook until it is heated through.

Step 8 –Evenly sprinkle the cheese over the beef mixture.

Step 9 –Turn off the heat, cover the skillet, and let the fajita casserole stand until the cheese has melted, about 5 minutes.

Step 10 –Serve the fajita casserole garnished with the cilantro.
