Ingredients

  • 2 tablespoons olive oil, divided
  • 2 pounds chuck or stew meat, cubed
  • salt, to taste
  • pepper to taste
  • 1 onion, chopped
  • 10 1/2 ounces beef broth
  • 10 1/2 ounces French onion soup
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 3 tablespoons cornstarch mixed with 1/3 cup cold water, optional, for thickening the gravy
  • mashed potatoes, optional, cooked, for serving

Directions

Step 1 –Using a large pot or a Dutch oven, heat up 1 tablespoon of the olive oil over a medium-high temperature.

Step 2 –Season the beef with the salt and pepper.

Step 3 –Add the meat into the pot, cooking it in small batches and removing it when the beef is browned and tender, about 5 minutes for each cube. Set the meat aside.

Step 4 –Reduce the heat to medium.

Step 5 –Add in the remaining 1 tablespoon of olive oil and the onion and cook until the onion has completely softened, about 7-10 minutes.

Step 6 –Add the cooked beef, beef broth, French onion soup, Worcestershire sauce, and the bay leaf into the large pot.

Step 7 –Bring the mixture to a boil.

Step 8 –Cover the pot and reduce the heat.

Step 9 –Allow the mixture to simmer until the beef is tender and juicy, about 1 1/2-2 hours.

Step 10 –Taste the gravy for seasoning and for thickness. If the gravy is too thin, add the cornstarch mixture a little at a time until it reaches the desired consistency.

Step 11 –Remove and discard the bay leaf.

Step 12 –Serve the dish over mashed potatoes.
