Beefy Rice Casserole

Ingredients

  • 1 pound lean ground beef
  • 1 medium onion, diced
  • 1 clove garlic, minced
  • 1 can mushrooms, drained and sliced
  • 1/2 teaspoon oregano
  • 1 (10-ounce) package frozen spinach, squeezed dry and chopped
  • 1 cup instant rice
  • 1 1/4 cups water
  • 1 (10.5-ounce) can condensed cream of celery soup
  • 1/3 cup sour cream
  • salt, to taste
  • black pepper, to taste
  • 1/2 cup frozen vegetables of your choice
  • 1 cup mozzarella cheese, shredded

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a large skillet over medium-high heat, add the ground beef, the onion, and the garlic and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes. Drain the excess grease.

Step 3 –In a large bowl, add the beef mixture, the mushrooms, the oregano, the spinach, the rice, the water, the cream of celery soup, the sour cream, the salt, the black pepper, and the frozen vegetables and stir to combine.

Step 4 –Transfer the beef mixture to a 9×13-inch baking dish, cover with aluminum foil, and bake until the rice is tender, about 40-45 minutes.

Step 5 –Transfer the casserole to a wire rack and turn the oven on the broil setting.

Step 6 –Sprinkle the mozzarella cheese over the top of the casserole, then broil until golden-brown, about 3 minutes.

Step 7 –Serve.
