  • 1 pound cherry or grape tomatoes, washed and dried
  • 1/2 cup red onion, diced
  • 1/2 cup balsamic vinegar
  • 1/2 teaspoon confectioners’ sugar
  • 1 tablespoon sea salt
  • 1/2 tablespoon olive oil
  • basil, optional, to taste, sliced thin, for garnish
  • green onions, optional, to taste, sliced, for garnish

Step 1 –Heat a large skillet over medium-high heat until just before smoking.

Step 2 –Add the tomatoes to the dry skillet and cook, turning every minute, until the tomatoes are charred on all sides but still hold their shape, about 3-4 minutes.

Step 3 –Add the onions and the balsamic vinegar and stir to combine.

Step 4 –Stir in the confectioners’ sugar and stir until it is dissolved.

Step 5 –Cook, while stirring often, until the onions soften and the vinegar thickens, about 3-5 minutes.

Step 6 –Pour the tomato mixture into a serving bowl.

Step 7 –Season the tomatoes with the sea salt and drizzle them with the olive oil.

Step 8 –Sprinkle with the basil and the green onions and serve.
