Ingredients

  • 1 (18-ounce) package sugar cookie mix
  • 1 stick butter, softened
  • 1 egg
  • 1 can sweetened condensed milk
  • 1 lemon, zested and juiced
  • 1 cup frozen blueberries, thawed, drained and patted dry
  • 1/2 cup sliced almonds
  • 1/2 cup white chocolate chips
  • 1 cup sweetened coconut

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a large bowl, add the cookie mix, the butter, and the egg and use an electric hand mixer to combine until a soft dough forms.

Step 4 –Pat the sugar cookie mixture into the prepared baking dish and bake for 15 minutes.

Step 5 –In a small bowl, whisk the sweetened condensed milk, the lemon zest, and the lemon juice together.

Step 6 –Pour the lemon mixture over the sugar cookie base, then sprinkle with the blueberries, the sliced almonds, the white chocolate chips, and the coconut, in that order.

Step 7 –Gently press the blueberry mixture into the lemon mixture.

Step 8 –Bake the bars until the edges are brown and bubbly and the coconut is golden-brown, about 25-35 minutes.

Step 9 –Place the dish on a wire rack to cool for at least 20 minutes and up to 1 hour.

Step 10 –Cut the bars into squares and serve.
