The Breakfast-In-Bed Bake is a tender cake with a rich buttery flavor and bursts of sweet, tart blueberries. A crunchy layer of warm, delectable streusel on top blankets this cake-like bake, adding texture and some sweet joy. Lean up against the headboard, cushion yourself with pillows, and let this Breakfast-In-Bed Bake pamper you as you deserve!
Ingredients
For the streusel:
- 1/2 cup unsalted butter, melted
- 1/3 cup light brown sugar, firmly packed
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon or cardamom
- 1 1/4 cups all-purpose flour
- salt, to taste
For the bake:
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup whole milk
- 2 teaspoons lemon zest
- 2 teaspoons vanilla extract
- 3 cups fresh blueberries, divided
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –Coat a 9×9-inch baking dish with cooking spray.
Step 3 –Stir 1/2 cup of the melted butter, the brown sugar, 1/4 cup of the granulated sugar, and the cinnamon together in a medium bowl.
Step 4 –Add 1 1/4 cups of the flour and the salt, to taste, to the butter mixture and stir until combined.
Step 5 –Stir the remaining flour, the baking powder, and 1/2 teaspoon of the salt together in a medium bowl.
Step 6 –In a large bowl, use an electric hand mixer and beat the remaining softened butter and the remaining granulated sugar on medium speed until creamy.
Step 7 –Add the eggs, one at a time, to the sugar mixture and beat until just combined after each addition.
Step 8 –Alternate gradually adding the flour mixture and the milk to the sugar mixture, and beat until just combined after each addition.
Step 9 –Stir the lemon zest and the vanilla into the batter mixture.
Step 10 –Gently fold 2 cups of the blueberries into the batter mixture.
Step 11 –Evenly spread the batter in the prepared baking dish.
Step 12 –Sprinkle the top of the batter with the remaining blueberries.
Step 13 –Use clean fingers to crumble the streusel mixture and evenly sprinkle it over the blueberries and the batter.
Step 14 –Bake the batter until a tester inserted into the center comes out clean, about 40-45 minutes.
Step 15 –Allow the bake to cool for 20 minutes.
Step 16 –Slice and serve.
