Ingredients
- 1 pound bacon, diced
- 1 medium sweet onion, chopped
- 9 large eggs, lightly beaten
- 4 cups frozen shredded hash brown potatoes, thawed
- 2 cups cheddar cheese, shredded
- 1 1/2 cups small curd cottage cheese
- 1 1/4 cups Swiss cheese, shredded
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease a 9×13-inch baking dish.
Step 3 –Heat a large skillet over medium-high heat.
Step 4 –Add the bacon and the onion to the skillet and cook, stirring regularly, until the bacon is evenly browned, about 10 minutes.
Step 5 –Drain the excess liquid from the skillet.
Step 6 –In a large bowl, add the bacon mixture, the eggs, the hash brown potatoes, the cheddar cheese, the cottage cheese, and the Swiss cheese and stir to combine.
Step 7 –Pour the bacon mixture into the prepared baking dish.
Step 8 –Bake the casserole until the eggs are set and the cheese is melted, about 45-50 minutes.
Step 9 –Allow the casserole to stand for 10 minutes before cutting and serving.
Step 10 –Serve.
