Ingredients

  • 5 strips bacon
  • 1 small onion, diced
  • 1 cup fresh spinach, packed
  • 1 tablespoon garlic, minced
  • 12 eggs
  • 1/2 cup milk
  • salt, to taste
  • black pepper, to taste
  • 1/2 cup feta cheese

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Grease an 8-inch square baking dish.

Step 3 -In a large skillet over medium-high heat, add the bacon and cook, flipping occasionally, until they are crispy.

Step 4 -Place the cooked bacon on a paper-towel-lined plate to drain and keep the bacon drippings in the skillet.

Step 5 -In the same skillet, add the onions, the spinach, and the garlic to the bacon drippings and sauté until the onions and the spinach are tender, about 5 minutes.

Step 6 -Pour the spinach mixture in the prepared baking dish.

Step 7 -In a large bowl, whisk the eggs.

Step 8 -Add the milk, the salt, and the black pepper to the beaten eggs and whisk to combine.

Step 9 -Cut the bacon into small pieces, then sprinkle 2/3 of them over the spinach mixture.

Step 10 -Sprinkle 2/3 of the feta cheese over the bacon layer and top with the egg mixture. Stir to combine.

Step 11 -Sprinkle the remaining bacon and the remaining feta cheese over the egg mixture.

Step 12 -Bake the egg bake until the center is set and a toothpick inserted into the center comes out clean, about 40-45 minutes.

Step 13 -Serve.
