Breakfast Meatballs

If pies, biscuits and gravy, and bread soaked in custard and fried are all acceptable breakfast fare, why not meatballs? Breakfast Meatballs are a deeply umami take on traditional breakfast meats, filled with sausage and bacon, infused with Worcestershire sauce and mushrooms to emphasize the all the savory flavors. Imagine piling Breakfast Meatballs on top of a bed of scrambled eggs! Or served with toast and a dipping sauce like maple syrup! It’s a little bit of whimsy that also fills you up!

Ingredients

  • 3 1/2 ounces bacon
  • 1 small onion, very finely diced
  • 5 ounces mushrooms, very finely diced
  • 1 pound sausage meat
  • 1 clove garlic, finely diced
  • 3/4 cup breadcrumbs
  • 1/4 cup milk
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon fresh parsley
  • 1 egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Line a large baking tray with parchment paper.

Step 3 –In a large pan over low heat, fry the bacon until it is crispy and the fat has rendered down.

Step 4 –Transfer the bacon to a paper-towel-lined plate and leave the bacon fat in the pan.

Step 5 –When it is cool enough to touch, finely dice the bacon.

Step 6 –Increase the heat to medium and add the onion and the mushroom to the bacon fat.

Step 7 –Fry the veggie mixture until it is very soft and tender.

Step 8 –Add the garlic to the veggie mixture and fry until it is fragrant, and the veggies have shrunk down and are browned.

Step 9 –Transfer the veggie mixture to a plate to cool.

Step 10 –In a large mixing bowl add the breadcrumbs, the milk, and the Worcestershire sauce and mash with a fork until the breadcrumbs absorb the liquid.

Step 11 –Add the crumbled bacon, the veggie mixture, the parsley, the egg, the salt, and the white pepper to the breadcrumb mixture and mix with a fork until it is fully incorporated.

Step 12 –Add the sausage to the breadcrumb mixture and mix with your hands to evenly combine.

Step 13 –Scoop the meatball mixture into tablespoon-sized chunks and space them out evenly onto the prepared baking tray.

Step 14 –One by one, roll the meat chunks into balls.

Step 15 –Coat the meatballs with cooking spray and bake until they are deeply golden in color, heated through the center, and have reached an internal temperature of 155 degrees F, about 20 minutes.

Step 16 –Serve.
