Buffalo Chicken Bites

Buffalo Chicken Bites are basically a magic spell of the food world. A boring salad becomes your favorite salad when piled high with savory chicken coated in the famously distinct spicy, buttery sauce. Baked potatoes become delicious delights, and ordinary rice becomes a stunning rice bowl, which ensures you get every bit of that homemade sauce. Buffalo Chicken Bites are ready in half an hour or less and are easy to make, so there’s never an excuse to have a boring meal again!

Ingredients

  • 2 tablespoons olive oil
  • 6 chicken breasts, cut into 2-inch pieces
  • 2 teaspoons salt
  • 1/2 teaspoon pepper, optional
  • 4 tablespoons butter or ghee
  • 1 cup hot sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • celery, optional, to taste, for serving
  • blue cheese dressing, optional, to taste, for serving

Directions

Step 1 –Heat the olive oil in a large skillet over medium-high heat.

Step 2 –When the oil begins to shimmer, add the chicken and sauté until the chicken is cooked through to 165 degrees F, about 5-7 minutes. Make sure you don’t crowd them in the pan, working in batches as needed.

Step 3 –Season the chicken with salt and pepper.

Step 4 –Once the chicken is cooked through, place all of it in the pan and reduce the heat to low.

Step 5 –Add the butter, hot sauce, garlic powder, and onion powder.

Step 6 –Stir the chicken until everything is coated in the buffalo sauce.

Step 7 –Serve the chicken with celery and blue cheese dressing.
