Ingredients
- 1/4 cup extra-virgin olive oil
- 20 cloves garlic, divided
- 2 pounds chicken breast, boneless and skinless, fat trimmed and cut into 1-inch-thick pieces
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons parsley, chopped
Directions
Step 1 –In a medium skillet over low heat, heat the oil.
Step 2 –Add 15 of the garlic cloves to the skillet and cook, stirring every 5 minutes, for 20 minutes.
Step 3 –Evenly season the chicken pieces with the salt and the pepper.
Step 4 –Press the remaining garlic cloves into a small bowl and set aside.
Step 5 –Transfer the cooked garlic to a bowl, then drain and reserve the oil.
Step 6 –Add 1 tablespoon of the reserved oil back into the skillet and heat over high heat.
Step 7 –Add the chicken pieces to the oil in a single layer and cook, about 3-4 minutes.
Step 8 –Flip the chicken pieces over and cook until they reach an internal temperature of 165 degrees F, about 1 minute.
Step 9 –Stir the pressed garlic into the chicken and cook, stirring continuously, about 1-2 minutes.
Step 10 –Add the cooked garlic and the parsley to the chicken and toss to coat.
Step 11 –Serve immediately.
