Carrot Cake Cookies

Ingredients

For the cookies:

  • 3/4 cup butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon kosher salt
  • 1 cup carrots, shredded and squeezed dry, packed
  • 3/4 cup unsweetened dried shredded coconut
  • 1/2 cup raisins
  • 2 cups old-fashioned oats

For the cream cheese glaze:

  • 1 cup confectioners’ sugar
  • 1 ounce cream cheese, room temperature
  • 4 teaspoons milk
  • 1/4 teaspoon pure vanilla extract

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Line an 18×26-inch baking sheet with parchment paper.

Step 3 -In the bowl of a stand mixer, add the butter, the brown sugar, and the granulated sugar and beat until it is light and fluffy.

Step 4 -Add the eggs, 1 at a time, to the butter mixture and beat well after each addition.

Step 5 -Add 1 teaspoon of the vanilla extract to the butter mixture and beat to combine.

Step 6 -In a large bowl, add the flour, the baking soda, the cinnamon, the nutmeg, and the salt and whisk to combine.

Step 7 -Add the flour mixture to the butter mixture and beat until they are well-combined.

Step 8 -Add the shredded carrots, the coconut, the raisins, and the old-fashioned oats to the batter and mix until they are just combined.

Step 9 -Scoop 1-inch rounds of the dough onto the prepared baking sheet and chill in the freezer, about 10 minutes.

Step 10 -Bake the cookies until they are golden, about 15-18 minutes.

Step 11 -Place the baking sheet on a wire rack and let the cookies cool.

Step 12 -In a second large bowl, add the confectioners’ sugar, the cream cheese, the milk, and the remaining vanilla extract and beat with an electric hand mixer until it is combined.

Step 13 -Drizzle the glaze over each of the cookies and let them rest until the glaze has hardened.

Step 14 -Serve.
