Ingredients
- butter, to taste, softened, for greasing the pan
- 1 1/2 cups all-purpose flour, plus more, to taste, for dusting the pan
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/2 cup sugar
- 1 large egg
- 1/4 cup vegetable oil
- 3/4 cup buttermilk
- 1 medium sweet potato, cooked, peeled and mashed
- 1/2 cup pecans, chopped
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Use the butter to grease a loaf pan, then use the extra flour to lightly dust it.
Step 3 –In a medium bowl, add the remaining 1 1/2 cups of flour, the baking powder, the baking soda, the salt, the cinnamon, and the cloves and stir to combine.
Step 4 –In a large bowl, add the sugar, the egg, the vegetable oil, the buttermilk, and the mashed sweet potato and stir to combine.
Step 5 –Add the flour mixture to the sweet potato mixture and stir until it is well-combined.
Step 6 –Fold the pecans into the batter.
Step 7 –Spoon the batter into the prepared loaf pan and bake, about 55 minutes-1 hour.
Step 8 –Transfer the loaf pan to a wire rack and let the bread cool, about 10 minutes.
Step 9 –Invert the bread onto a wire rack and let it cool completely.
Step 10 –Slice and serve.
