Ingredients
- 10 ounces spaghetti
- 6 strips bacon, cut into 1/2-inch-thick pieces
- 1 medium yellow onion, diced
- 1 large zucchini, sliced into thin ribbons
- 2 cloves garlic, sliced
- salt, to taste
- black pepper, to taste
- 2 eggs
- parmesan cheese, to taste, grated, for serving
- fresh parsley, to taste, chopped, for garnish

Directions
Step 1 –In a large pot of salted boiling water, cook the spaghetti to al dente, according to the package directions.
Step 2 –Heat a large sauté pan over medium heat.
Step 3 –Add the bacon to the pan and cook until crispy, about 5 minutes.
Step 4 –Transfer the bacon to a paper-towel-lined plate.
Step 5 –Discard all but a thin film of the bacon fat from the pan.
Step 6 –Add the onion, the zucchini, and the garlic to the remaining bacon fat and cook until soft and lightly browned, about 5-7 minutes.
Step 7 –Stir the bacon into the veggie mixture and season with the salt and the pepper.
Step 8 –Drain the pasta, reserving a few ounces of the pasta water.
Step 9 –Add the pasta to the veggie mixture and toss to coat.
Step 10 –Stir enough of the pasta water into the veggie mixture so a thin layer of moisture clings to the noodles.
Step 11 –Transfer the pan from the heat and crack the eggs directly into the pasta. Use tongs or two forks to toss for even distribution.
Step 12 –Divide the carbonara among four bowls or plates and top with the grated cheese.
Step 13 –Garnish with the parsley and serve.
