Cheesy Chicken Rotini

Ingredients

  • 1 (16-ounce) box rotini pasta
  • 3 large chicken breasts, boneless and skinless, cut into 1-inch cubes
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground cayenne pepper
  • 2 (10.5-ounce) cans condensed cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup sour cream
  • 2 cups cheddar cheese, shredded, divided
  • fresh parsley leaves, to taste, for garnish

Directions

Step 1 -Coat a Dutch oven with nonstick cooking spray.

Step 2 -In a large pot of salted, boiling water, cook the rotini to al dente, according to the package directions.

Step 3 -Drain the water and return the rotini to the pot.

Step 4 -Season the chicken cubes with the black pepper, the garlic powder, the onion powder, the salt, and the cayenne pepper.

Step 5 -Add the seasoned chicken cubes to the Dutch oven and cook over medium-high heat, stirring frequently, until they reach an internal temperature of 165 degrees F, about 5-6 minutes.

Step 6 -Add the cooked rotini pasta, the cream of mushroom soup, the chicken broth, the sour cream, and 1 1/2 cups of the cheddar cheese to the chicken mixture and stir to combine.

Step 7 -Sprinkle the remaining cheddar cheese over the pasta mixture. Cover the Dutch oven and simmer until the pasta mixture is heated through and the cheese on top has melted, about 5-8 minutes.

Step 8 -Garnish the pasta mixture with the parsley and serve.
