Cher’s Favorite Meatballs

Meaty, tender, and with a slight ginger heat, each of these meatballs are coated in an extra tangy and sweet tropically-inspired sauce that makes the most of the beefy flavor. Ingredients

For the meatballs:

  • 2 1/2 pounds ground beef
  • 1/2 cup yellow onion, diced into small pieces
  • 1 teaspoon salt
  • 1 large egg
  • 1 cup breadcrumbs
  • 1/2 teaspoon fresh ginger root, mashed
  • 1/2 cup milk
  • 3 tablespoons oil

For the sauce:

  • 1 (21-ounce) can pineapple tidbits, drained and juices reserved
  • 2 1/2 teaspoons cornstarch
  • 3/4 cup brown sugar, packed
  • 2 tablespoons soy sauce
  • 1/2 cup apple cider vinegar

For serving:

  • pineapple tidbits, as specified above
  • 1/2 cup bell pepper, any color, diced into small pieces
  • 1/2 cup yellow onion, diced into small pieces

Directions

Step 1 –In a bowl, mix the beef, 1/2 cup of the onion, the salt, the egg, the breadcrumbs, the ginger root, and the milk.

Step 2 –Form the meat mixture into small meatballs, about 1/2-inch across.

Step 3 –In a large skillet, heat the oil until it is hot.

Step 4 –Add the meatballs to the oil and brown on all sides, about 2-3 minutes.

Step 5 –Transfer the meatballs to a paper-towel-lined plate.

Step 6 –In a saucepan, whisk together the pineapple juice, the cornstarch, the brown sugar, the soy sauce, and the apple cider vinegar.

Step 7 –Add the meatballs to the sauce mixture and cook over medium heat until the sauce has thickened and the meatballs are cooked through to at least 145 degrees F, about 15-20 minutes.

Step 8 –Add the pineapple tidbits, the bell pepper, and the remaining onion to the meatball mixture.

Step 9 –Cook the meatball mixture until the veggies are hot, about 3-4 minutes.

Step 10 –Serve.
