Chicken Pozole

Chicken Pozole is Mexican comfort food at its finest and most fabulous. Ingredients

For the soup:

  • 4 cups low-sodium chicken broth
  • 3 chicken breasts, boneless and skinless
  • 2 poblano peppers, chopped
  • 1 white onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • 2 teaspoons chili powder
  • 2 teaspoons kosher salt
  • freshly ground black pepper, to taste
  • 2 (15-ounce) cans hominy, drained

Optional, for serving:

  • radishes, to taste, thinly sliced
  • green cabbage, to taste, sliced
  • fresh cilantro, to taste, chopped

Directions

Step 1 -Place the chicken broth, the chicken breasts, the poblano peppers, the onions, the garlic, the cumin, the oregano, the chili powder, the salt, and the pepper into the slow cooker.

Step 2 -Cook on low until the chicken is tender and cooked through, about 6-8 hours.

Step 3 -Take the chicken breasts out of the slow cooker and shred them with two forks.

Step 4 -Return the chicken to the slow cooker along with the hominy and cook for another 30 minutes.

Step 5 -Serve the soup in bowls and top with the radish, the cabbage, and the cilantro.
