Cereal Chicken

Part of a balanced breakfast! Sorry, couldn’t resist the joke. Although there isn’t really a reason you couldn’t make Cereal Chicken a breakfast staple: it’s got cereal right on it, forming the crispy, crunchy coating! The chicken on the inside even took a luxurious buttermilk bath to get ready for its big debut, resulting in the juiciest and most flavorful chicken around! Seriously, you won’t believe this isn’t fried chicken when you bite into it. You could enjoy Cereal Chicken with a bed of mashed potatoes and a pool of gravy, or with fries and ketchup, or with waffles and syrup. The possibilities are endless, as will be your love for it!

Ingredients

  • 1 teaspoon garlic powder
  • 2 1/2 cups buttermilk, divided
  • 1 teaspoon celery seed, divided
  • 1/2 teaspoon cayenne pepper, plus more, to taste, divided
  • kosher salt, to taste
  • black pepper, to taste
  • 4 small chicken drumsticks, skins removed
  • 4 small chicken thighs, bone-in and skins removed
  • 1 cup all-purpose flour
  • 4 cups cornflakes cereal, crushed
  • dill pickled slices, to taste, for serving

Directions

Step 1 -Preheat the oven to 425 degrees F.

Step 2 -Fit a rack over a large, rimmed baking sheet lined with heavy-duty foil.

Step 3 -Combine the garlic powder, 1 1/2 cups of the buttermilk, 1/2 teaspoon of the celery seed, 1/2 teaspoon of the cayenne, the salt, and the pepper in a bowl.

Step 4 -Add the chicken drumsticks and the chicken thighs to the buttermilk mixture and allow them to marinate in the fridge for 30 minutes.

Step 5 -Combine the flour, the extra cayenne pepper, and the remaining celery seed in a bowl.

Step 6 -Season the flour mixture with the salt and the pepper.

Step 7 -In a separate bowl, add the remaining buttermilk, and season it with the salt and the pepper.

Step 8 -Place the cornflakes in a third bowl.

Step 9 -Transfer the chicken from the marinade and allow the excess to drip off. Discard the marinade.

Step 10 -Coat each of the chicken pieces in the flour mixture, the buttermilk mixture, and the cornflakes, in that order, pressing the cornflakes gently to help them adhere.

Step 11 -Arrange the chicken on the prepared baking sheet.

Step 12 -Bake until they are cooked through at 165 degrees F internally, about 25-27 minutes.

Step 13 -Serve with the pickles.
