Church-Meeting Lemon Bars

Built on a cornerstone of a cookie-cake-like layer of yum, and covered with a divine lemon, cream-like deliciousness, these luscious bites of love are truly lemon-scented heaven. See? Ingredients

For the crust:

  • 2 cups flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup salted butter, cut into small cubes, plus more, for greasing the dish

For the filling:

  • 1 1/2 cups granulated sugar
  • 1/4 cup flour
  • 4 large eggs
  • 4 medium lemons, zested and juiced
  • powdered sugar, to taste, for topping

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish with the extra butter.

Step 3 –In a large bowl, add 2 cups of the flour, 1/2 cup of the granulated sugar, and the salt and mix well to combine.

Step 4 –Add 1 cup of the butter to the flour mixture and use a pastry cutter to cut it together until it resembles fine crumbles.

Step 5 –Press the butter mixture into the bottom of the prepared baking dish and bake until it is golden around the edges, about 20 minutes.

Step 6 –In a large bowl, add the remaining granulated sugar and the remaining flour and stir to combine.

Step 7 –Add the eggs to the sugar mixture and whisk to combine.

Step 8 –Add the lemon zest and the lemon juice to the sugar mixture and mix until combined.

Step 9 –Evenly pour the lemon mixture over the crust, making sure the crust is completely covered, and bake, for about 20 minutes.

Step 10 –Let the lemon mixture cool on a wire rack, for about 2 hours.

Step 11 –Sift the confectioners’ sugar over the top of the lemon mixture.

Step 12 –Use a sharp knife to cut the lemon mixture into bars and serve.
