Cobbler Bites

If you’re pining for something sweet and fruity, but you don’t have a lot of time, these raspberry Cobbler Bites will be the perfect answer for your sweet tooth craving. How can you go wrong when you pair mini cakes with juicy raspberries (believe us, it’s worth repeating) baked right in for a splendid burst of fresh-from-the-patch flavor? Served warm with vanilla ice cream or whipped cream (or both), Cobbler Bites will be your new go-to when you need a tasty dessert fast! They’re a fruity bite-size wonder that just taste so good!

Ingredients

  • 2 cups self-rising flour
  • 2 cups granulated sugar, plus more, to taste
  • 2 cups milk
  • 1 cup butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups fresh raspberries
  • vanilla ice cream, optional, to taste, for serving
  • whipped cream, optional, to taste, store-bought or homemade, for serving

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease two 12-cup muffin tins.

Step 3 –In a large bowl, add the flour and 2 cups of the granulated sugar and whisk to combine.

Step 4 –Add the milk to the flour mixture and whisk to combine.

Step 5 –Add the melted butter and the vanilla extract to the batter mixture and whisk to combine.

Step 6 –Pour 1/4 cup of the batter into each of the muffin tin cups.

Step 7 –Evenly sprinkle the raspberries and the extra granulated sugar on top of each of the bites.

Step 8 –Bake the bites until they are golden-brown and crisp around the edges, about 45 minutes.

Step 9 –Transfer the muffin tins from the oven and invert the bites onto a wire rack to cool.

Step 10 –Serve the bites with the vanilla ice cream and the whipped cream.
