Coconut Dream Cookies

The tropical, creamy flavor of coconut infuses each of these chocolatey, sweet rounds of crunchy goodness! To really increase the sunny, paradisial flavor, each of these cookies is glazed with coconut icing and topped with crunchy, toasted shredded coconut. Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar, packed
  • 1 egg
  • 1 teaspoon instant espresso coffee powder
  • 2/3 cup powdered sugar
  • 1/2 teaspoon coconut extract
  • 2 teaspoons fat-free milk
  • 3 tablespoons unsweetened shredded toasted coconut

Directions

Step 1 –In a small bowl, stir together the flour, the cocoa powder, the baking powder, and the salt.

Step 2 –In a separate medium-size mixing bowl, beat the butter with an electric mixer on medium to high speed for 30 seconds.

Step 3 –Add the granulated sugar and the brown sugar to the butter and beat until combined, scraping the sides of the bowl occasionally.

Step 4 –Beat the egg and the espresso powder into the butter mixture until combined.

Step 5 –Beat in as much of the flour mixture as possible with the mixer.

Step 6 –Using a wooden spoon, stir in any of the remaining flour mixture.

Step 7 –Divide the dough in half.

Step 8 –Shape each dough half into a 6-inch, log-like roll.

Step 9 –Wrap each dough roll in plastic wrap or waxed paper.

Step 10 –Chill the dough rolls until they are firm enough to slice, about 2 hours.

Step 11 –Preheat the oven to 350 degrees F.

Step 12 –Line a large cookie sheet with parchment paper.

Step 13 –Cut the dough rolls into 1/3-inch slices, resulting in about 18 slices per roll.

Step 14 –Place the slices 1-inch apart from each other on the prepared cookie sheet.

Step 15 –Bake the cookies until they are set, about 8 minutes.

Step 16 –Transfer the cookies to wire racks and allow them to cool

Step 17 –Combine the powdered sugar and the coconut extract in a small bowl.

Step 18 –Stir just enough of the milk into the powdered sugar mixture until the icing forms a consistency that can be drizzled. You may not need the full 2 teaspoons.

Step 19 –Drizzle the cookies with the icing and then sprinkle them with the toasted coconut.

Step 20 –Serve.
