Ingredients
- 1/4 cup butter, melted, plus 1 tablespoon butter, separated
- 1/2 onion, chopped
- 1/4 cup flour
- 2 cups milk
- 2 cups chicken stock
- 1 1/2 cups broccoli florets, coarsely chopped
- 1 cup carrots, matchstick-cut
- 1 stalk celery, thinly sliced
- 2 1/2 cups sharp cheddar cheese, shredded
- salt, to taste
- ground black pepper to taste
Directions
Step 1 –Heat a skillet on the stovetop over medium-high heat.
Step 2 –Add 1 tablespoon of the butter.
Step 3 –Once the butter has melted, cook the chopped onion until soft, about 5 minutes.
Step 4 –In a separate saucepan over medium-low heat, combine the 1/4 cup of the melted butter and the flour together.
Step 5 –Cook until flour loses its granular texture, adding 1 to 2 tablespoons of the milk if necessary to keep the flour from burning, about 3- 4 minutes.
Step 6 –Slowly pour the remaining milk into the flour mixture while whisking constantly to prevent burning.
Step 7 –Add the chicken stock into the milk mixture and stir.
Step 8 –Bring the mixture to a simmer and cook until the flour taste is gone and the mixture is thickened, about 20 minutes. Add the broccoli, carrots, sautéed onion, and celery.
Step 9 –Simmer until the vegetables are tender, about 20 minutes.
Step 10 –Add the cheddar cheese into the vegetable mixture and stir until the cheese melts.
Step 11 –Season with salt and pepper to taste.
Step 12 –Serve immediately!
