Delicious Shrimp Fajitas

Juicy, plump shrimp sizzling with the sweet, tender veggies, all mixed together with a spicy, Caribbean-inspired flare… yeah, even your heart will be cheering for this one. Delicious Shrimp Fajitas will have every part of you very excited for dinner!

Ingredients

  • 1 pound shrimp, uncooked, peeled and deveined
  • 4 tablespoons fresh cilantro, minced, divided
  • 3 tablespoons olive oil, divided
  • 3 teaspoons Caribbean jerk seasoning
  • 1/8 teaspoon chili powder
  • 1/8 teaspoon ground cumin
  • 1 cup fat-free sour cream
  • 1 large onion, halved and thinly sliced
  • 1 medium sweet red pepper, cut into thin strips
  • 1 medium green pepper, cut into thin strips
  • 8 (6-inch) flour tortillas, warmed, for serving
  • 1/2 cup salsa, for serving

Directions

Step 1 –Preheat the oven to 300 degrees F.

Step 2 –In a large bowl, add the shrimp, 2 tablespoons of the cilantro, 1 tablespoon of the olive oil, the Caribbean jerk seasoning, the chili powder, and the cumin, and stir well.

Step 3 –Let the shrimp mixture marinate for 10 minutes.

Step 4 –In a small bowl, mix the sour cream and the remaining cilantro together. Set it aside.

Step 5 –In a large nonstick skillet over medium-high heat, heat 1 teaspoon of the oil.

Step 6 –Add the onion, the red peppers, and the green peppers to the oil and cook, stirring occasionally, until they are crisp-tender.

Step 7 –Transfer the veggie mixture to a clean plate.

Step 8 –In the same pan over medium-high heat, add the remaining olive oil and the marinated shrimp and cook, while stirring, until the shrimp reaches an internal temperature of 145 degrees F and is pink.

Step 9 –Add the veggie mixture to the shrimp and cook, while stirring, until well-combined and heated through.

Step 10 –Serve the shrimp fajitas on the warm tortillas and topped with the salsa.
