Ingredients
- 1 tablespoon canola oil
- 1 small zucchini, thinly sliced
- 1 medium yellow summer squash, thinly sliced
- 1/2 pound fresh mushrooms, sliced
- 1 small onion, halved and sliced
- 1 medium carrot, julienned
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 8 (8-inch) flour tortillas, warmed
- 2 cups cheddar cheese, shredded
- 1 cup sour cream
- 1 cup salsa
Directions
Step 1 –In a large cast-iron or heavy skillet, heat the oil.
Step 2 –Add the zucchini, the squash, the mushrooms, the onion, the carrot, the salt, and the pepper to the oil and sauté until the veggies are crisp-tender, about 5-7 minutes.
Step 3 –Using a slotted spoon, place about 1/2 cup of the vegetable mixture down the center of each of the tortillas.
Step 4 –Sprinkle the vegetables with 1/4 cup of the cheese each.
Step 5 –Top the cheese with the sour cream and the salsa and fold in the sides of the tortillas.
Step 6 –Serve.
