Dream Roll-Ups

These little wraps are rolling up to your door to bring good times and nourishing flavors! Dream Roll-Ups are filled with tangy, creamy, nutty, sharp cheeses, aromatic garlic, and tender vegetables, all wrapped in a lightly crisp and warm tortilla. Isn’t a great vegetarian meal like that, one that’s low-fat but big on flavor, the dream? Dream Roll-Ups certainly think so and they are making that dream a reality!

Ingredients

  • 4 ounces light whipped cream cheese
  • 3 tablespoons extra-virgin olive oil
  • 1 small yellow onion, diced
  • 1 red bell pepper, cut into thin strips
  • salt, to taste
  • 1 clove garlic, finely chopped
  • 1 (8-ounce) bag baby spinach leaves
  • pepper, to taste
  • 2 green onions, thinly sliced
  • 1/4 cup parmesan cheese, shredded
  • 1/3 cup feta cheese, crumbled
  • 6-8 (8-inch) gluten-free, low-carb, or whole wheat flour tortillas
  • cooking spray, to taste

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat a 9×13-inch baking dish with cooking spray.

Step 3 –Place the cream cheese in a medium-sized mixing bowl.

Step 4 –In a large skillet over medium heat, heat the olive oil.

Step 5 –Add the onions and the peppers and season them with the salt.

Step 6 –Cook the onions and the peppers until tender, about 3-4 minutes.

Step 7 –Stir in the garlic and cook until fragrant, about 30 seconds.

Step 8 –Add the spinach, the salt, and the pepper and cook, while stirring, until the spinach is cooked down, about 3 minutes.

Step 9 –Transfer the spinach mixture to the cream cheese.

Step 10 –Add the green onions, the parmesan cheese, and the feta cheese to the cream cheese-spinach mixture and stir until well-combined.

Step 11 –Place about 1/4 cup of the filling onto each tortilla and roll each of the tortillas up.

Step 12 –Arrange the roll-ups in the prepared baking dish, seam-side down.

Step 13 –Lightly coat each roll-up with the cooking spray.

Step 14 –Bake until lightly browned and heated through, about 15 minutes.

Step 15 –Cut each roll-up in half.

Step 16 –Serve.
