Drunken Plantains are a breeze to put together, plus it’s one of those desserts that can be eaten on its own or served over ice cream… the choice is up to you!
Ingredients
- 1 tablespoon almonds, sliced
- 1/2 cup white sugar
- 1/4 cup rum
- 1/4 cup butter
- 2 plantains, peeled and sliced
- ground cinnamon, to taste
Directions
Step 1 –In a skillet over medium-high heat, add the almonds and cook, while stirring, until they are golden and toasted, about 2-4 minutes. Set it aside.
Step 2 –In a microwave-safe bowl, add the sugar, the rum, and the butter and stir to combine.
Step 3 –Cover the bowl with a lid or plastic wrap and microwave, stirring once about halfway through, until hot, about 2-3 minutes.
Step 4 –Add the plantain slices to the rum sauce.
Step 5 –Sprinkle the plantain slices with the cinnamon.
Step 6 –Cover the bowl again and microwave until the plantains are hot and tender, about 1-2 minutes.
Step 7 –Top the plantains with the toasted almonds.
Step 8 –Serve.
