Easy Chimichurri Chicken has these bold flavors infused throughout, marinating tender-cooked chicken and slathering it over top. It takes less than half an hour to make Easy Chimichurri Chicken, so you can enjoy a restaurant-quality dinner with no sweat. Ingredients
- 1 pound chicken breasts, boneless, skinless, and pounded into 1/2-inch thickness
- 1 pound chicken thighs, boneless and skinless
- 1 cup chimichurri sauce, divided
Directions
Step 1 –Preheat the grill to 450 degrees F.
Step 2 –In a medium bowl, toss the chicken with about 1/2 cup of chimichurri.
Step 3 –Let the chicken marinate for about 10 minutes.
Step 4 –Grill the chicken breasts until fully cooked, about 6-8 minutes per side, depending on their size. Chicken thighs will take a little less time to fully cook, about 4 to 6 minutes a side.
Step 5 –Once the chicken is grilled, allow it to rest for about 4 -5 minutes before topping it with extra chimichurri sauce and slicing.
Step 6 –Serve the chicken with any extra chimichurri on the side.
