Ingredients

  • 8 corn tortillas
  • 1/4 cup vegetable oil
  • 1 cup rotisserie chicken, diced
  • 1 package taco seasoning
  • 1 (15-ounce) can black beans, drained
  • 1/2 cup salsa
  • 1/2 cup cilantro, diced, divided
  • 1 cup tomatoes, diced
  • 2 cups lettuce, shredded
  • 1 cup queso fresco, crumbled
  • 1/2 cup sour cream, optional

Directions

Step 1 –In a skillet, fry the corn tortillas in the vegetable oil over medium heat until they are crispy, about 1 minute per side.

Step 2 –Drain the tortillas on paper towels and keep them warm.

Step 3 –Add the diced chicken to the skillet and sprinkle with the taco seasoning and sauté until it is heated through. Move the chicken to a serving bowl and keep it warm.

Step 4 –Add the black beans to the skillet and mash until most of them are broken.

Step 5 –Add the salsa and 1/4 of the cilantro to the beans and sauté until the beans are thickened and creamy, about 5 minutes.

Step 6 –Spread the black bean mixture onto the fried tortillas and top with the chicken.

Step 7 –Top the chicken with the tomatoes, the lettuce, the remaining cilantro, the queso fresco, and the sour cream.

Step 8 –Serve.
