Ingredients

  • 3 tablespoons unsalted butter, plus more, to taste, for greasing the baking dish
  • 1 tablespoon salt-free lemon pepper seasoning blend
  • 1 teaspoon kosher salt
  • 4 chicken breasts, boneless and skinless, patted dry
  • 1 small lemon, thinly sliced
  • 2 tablespoons fresh parsley leaves, coarsely chopped, for garnish

Directions

Step 1 –Adjust an oven rack to the middle position. Preheat the oven to 425 degrees F.

Step 2 –Use the extra butter to grease a 9×13-inch baking dish.

Step 3 –In a small saucepan over medium-low heat, melt the remaining 3 tablespoons of the butter.

Step 4 –Add the lemon pepper seasoning and the salt to the melted butter and stir until combined.

Step 5 –Place the chicken breasts in the prepared baking dish and use a pastry brush to evenly coat them with the butter mixture.

Step 6 –Evenly scatter the lemon slices over the coated chicken breasts.

Step 7 –Bake the chicken breasts until they reach an internal temperature of 165 degrees F and the juices run clear, about 25-35 minutes.
