Ingredients
For the chicken pasta:
- 1 tablespoon olive oil
- 1 small onion, diced
- 4 cloves garlic, finely minced or pressed
- 2 chicken breasts, boneless and cubed
- salt, to taste
- pepper, to taste
- 1/2 teaspoon dried basil
- 1/2 teaspoon red pepper flakes, optional
- 1 (12-ounce) box long pasta, such as spaghetti
- 3 cups chicken broth
- 1 tablespoon lemon zest
- 1/4 cup lemon juice, freshly squeezed
- 1/2 cup light or heavy cream
Optional, for serving:
- lemon wedges, to taste
- fresh basil, to taste
- parmesan cheese, to taste, shredded
Directions
Step 1 –Heat a large skillet over medium heat.
Step 2 –Add the olive oil.
Step 3 –Ad the onions and cook until tender, about 4-5 minutes.
Step 4 –Add the garlic and cook until fragrant, about 1 minute.
Step 5 –Add the chicken, the salt, the pepper, the dried basil, and the red pepper flakes and sauté until the chicken is cooked through, about 7-10 minutes.
Step 6 –Add the pasta and the broth, cooking until the pasta is al dente, according to the package directions.
Step 7 –Add the lemon zest, the lemon juice, and the cream, stirring to combine, about 1-2 minutes.
Step 8 –Remove the skillet from the heat.
Step 9 –Serve on plates or in large bowls and top with lemon wedges, the fresh basil, and the parmesan!
