Ingredients
For the salad:
- 1 (9-ounce) bag romaine lettuce
- 1 stalk celery, chopped
- 1 red bell pepper, chopped
- 1/2 red onion, finely chopped
- 4 ounces sliced salami, chopped
- 4 ounces sliced soppressata, chopped
- 4 ounces sliced mortadella, chopped
- 4 ounces sliced provolone cheese, chopped
- 1 (16-ounce) jar giardiniera, drained and chopped
- 1/2 cup Kalamata olives, pitted and chopped
- 6-8 pepperoncini, finely chopped, plus more, to taste, for garnish
- 2 tablespoons parmesan cheese, shredded
For the dressing:
- 3 tablespoons red wine vinegar
- 1/4 cup olive oil
- 1 clove garlic, finely minced
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- salt, to taste
- pepper, to taste

Directions
Step 1 –In a large bowl, add the romaine, the celery, the bell pepper, the red onion, the salami, the soppressata, the mortadella, the provolone, the giardiniera, the olives, 6-8 of the pepperoncinis, and the parmesan.
Step 2 –In a small bowl, add the vinegar, the olive oil, the garlic, the oregano, the basil, the salt, and the pepper and whisk to combine.
Step 3 –Add the dressing to the salad and toss until well-coated and thoroughly combined.
Step 4 –Serve garnished with the extra pepperoncinis.
