Ingredients
- 3 1/2 cups bulgur wheat
- 1/3 cup red onion, chopped
- 3 mini cucumbers
- 1/2 cup fresh Italian flat-leaf parsley, chopped
- 1/2 cup fresh mint, chopped
- 1/2 cup pistachios, coarsely chopped
- 2 cups chickpeas, drained
- 3 tablespoons lemon juice
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup feta, crumbled, plus more, to taste, for serving
Directions
Step 1 -Cook the bulgur wheat according to the package directions.
Step 2 -Cool and fluff the bulgur wheat.
Step 3 -Place the red onions into a bowl of cold water.
Step 4 -Let the onions sit in the water for 10 minutes.
Step 5 -Drain the onions.
Step 6 -Toss the bulgur, the red onions, the cucumbers, the parsley, the mint, the pistachios, the chickpeas, the lemon juice, the olive oil, the salt, the pepper, and 1/2 cup of the feta cheese.
Step 7 -Top each serving with the extra feta cheese and serve!
