Ingredients

  • 3 garlic cloves, minced
  • 1 tablespoon dried rosemary
  • salt, to taste
  • pepper, to taste
  • 2 pounds boneless pork loin roast
  • 1/4 cup olive oil
  • 1/2 cup white wine

Directions

Step 1 –Set the oven to 350 degrees F.

Step 2 –Crush the garlic with your rosemary, salt and pepper, and make it into a paste.

Step 3 –Score the meat with a sharp knife in several places and press in the garlic paste in the openings.

Step 4 –Rub in the meat with the garlic mixture and oil.

Step 5 –Place the pork loin into the oven, turning and basting the pork with the pan liquids.

Step 6 –Cook it until the pork is no longer pink in the center, about 1 hour. A thermometer inserted in the center should read 145 degrees F when the pork is fully cooked.

Step 7 –Remove the roast to a platter.

Step 8 –Heat the wine in the pan and stir to loosen browned bits of food on the bottom.

Step 9 –Serve and enjoy!
