Ingredients
- 1 (2-3-pound) pork loin
- salt, to taste
- pepper, to taste
- 2 tablespoons vegetable oil
- 8 cloves garlic, minced
- 1/4 cup soy sauce
- 1 (23.5-ounce) can pineapple chunks
- 1/2 cup brown sugar
- rice, optional, to taste, cooked and warm, for serving
Directions
Step 1 –Trim the pork loin of excess fat.
Step 2 –Season the pork with the salt and the pepper. Set it aside.
Step 3 –Heat a large pan over medium-high heat.
Step 4 –Add the oil.
Step 5 –Once the oil is hot, add the seasoned pork loin.
Step 6 –Brown the pork on each side until golden-brown, about 2-4 minutes.
Step 7 –Add the pork to a slow cooker and rub it with the garlic.
Step 8 –Add the soy sauce and the pineapple chunks and their juices to the slow cooker.
Step 9 –Pour in the brown sugar evenly on top of the pork mixture.
Step 10 –Cover the slow cooker and cook on low heat for 4-6 hours.
Step 11 –Transfer the pork to a cutting board and cut it into bite-sized pieces. Return the pork pieces to the slow cooker and stir them in with the pineapple mixture.
Step 12 –Serve the pork mixture over the rice.
