Not us when we don’t have to! This Easy Salmon Salad is the perfect dish to have on deck when your afternoon hunger strikes. It’s creamy, it’s crunchy, and it’s loaded with all sorts of protein to ensure you actually get full. Eat it with some crackers and veggies or sandwich it between a croissant – however you eat Easy Salmon Salad is totally up to you. All that matters is you’ve got a delicious, fairly nutritious option for lunch that you’re excited about!
Ingredients
- 1 (5-ounce) can salmon, drained
- 1 celery rib, finely chopped
- 2 tablespoons red onion, finely chopped
- 1 dill pickle, finely chopped
- 1 tablespoon capers, drained
- 1/4 cup Greek yogurt or plain yogurt
- 1 tablespoon mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 teaspoon kosher salt, plus more, to taste
- fresh ground black pepper, to taste
- assorted crackers, to taste, for serving
- assorted veggies, to taste, for serving
Directions
Step 1 –In a medium bowl, add the salmon and flake lightly with a fork.
Step 2 –Add the celery, the red onion, the pickle, the capers, the Greek yogurt, the mayonnaise, the Dijon mustard, and 1/4 teaspoon of the salt, and the pepper and stir to combine.
Step 3 –Taste the salmon salad and adjust the seasoning with more of the salt and the pepper as needed.
Step 4 –Serve the salmon salad with the crackers and the veggies.
