Easy Tortellini Soup

Ingredients

  • 8 cups low-sodium vegetable or chicken broth
  • 1 (1-pound) bag frozen peas and carrots
  • 10 ounces fresh cheese tortellini
  • 1/2 cup heavy cream
  • kosher salt, to taste
  • black pepper, to taste
  • parmesan cheese, to taste, shaved
  • croutons, optional, to taste, for serving
  • olive oil, to taste, for serving

Directions

Step 1 –In a medium pot over medium-high heat, bring the broth to a gentle boil.

Step 2 –Add the peas and carrots to the pot and return the mixture to a gentle boil.

Step 3 –Add the tortellini to the soup mixture and cook until they are almost tender, about 3-5 minutes.

Step 4 –Add the heavy cream to the soup mixture and cook for 2 minutes.
