Easy Vegetable Lasagna

Ingredients

  • 1 (28 ounce) jar pasta sauce
  • 1 (8 ounce) package no-boil lasagna noodles
  • 15 ounces part-skim ricotta cheese
  • 3 cups lightly steamed vegetables, of your choice
  • 8 ounces part-skim mozzarella cheese, grated

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a 9×13-inch casserole dish spread a thin layer of the pasta sauce on the bottom.

Step 3 –Layer the lasagna noodles over the sauce. This should take about 3-4 noodles.

Step 4 –Place the ricotta in a bowl and add about 1/4 cup of water, mixing until fully incorporated.

Step 5 –Spread 1/3 of the ricotta mixture over the pasta.

Step 6 –Spread 1/3 of the remaining pasta sauce over the cheese.

Step 7 –Spread 1/3 of the vegetables over the sauce.

Step 8 –Sprinkle 1/3 of the mozzarella over the veggies.

Step 9 –Repeat the layering twice starting with the noodles and ending with the mozzarella.

Step 10 –Cover the casserole dish and bake until the noodles are tender, about 35-40 minutes.

Step 11 –Uncover and continue baking until the cheese starts to become golden, about 5 minutes.

Step 12 –After removing it from the oven, allow the lasagna to sit for 5 minutes before serving.
