Ingredients
- 1 large potato, peeled, cut into 1 1/2-inch pieces
- 1 large carrot, cut into 1/2-inch slices
- 1 1/2 cups water
- 1 cup reduced-sodium chicken broth
- 5 medium fresh mushrooms, halved
- 1 tablespoon all-purpose flour
- 1/4 cup reduced-fat evaporated milk
- 1/4 cup part-skim mozzarella cheese, shredded
- 1 (1/2-pound) salmon fillet, cut into 1 1/2-inch pieces
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- 1 tablespoon fresh dill, chopped

Directions
Step 1 –In a large saucepan over medium-high heat, add the potato, the carrot, the water, and the chicken broth and bring it to a boil.
Step 2 –Reduce the heat to medium and cook the potato mixture, uncovered, until the vegetables are tender, about 10-15 minutes.
Step 3 –Add the mushrooms and cook, stirring occasionally, until tender, about 4-5 minutes.
Step 4 –In a small bowl, add the flour and the evaporated milk and mix until smooth.
Step 5 –Add the flour mixture to the soup mixture and stir to combine.
Step 6 –Return the soup mixture to a boil.
Step 7 –Reduce the heat to medium.
Step 8 –Add the mozzarella cheese and cook, while stirring, until the cheese is melted.
Step 9 –Reduce the heat to medium-low.
Step 10 –Add the salmon and cook, uncovered, until it begins to flake easily with a fork and reaches an internal temperature of 145 degrees F, about 3-4 minutes.
Step 11 –Transfer the saucepan from the heat.
Step 12 –Add the pepper, the salt, and the dill to the soup mixture, and stir until combined.
Step 13 –Serve.
