Ingredients
- 1/2 cup fresh parsley sprigs, packed
- 1/2 cup fresh mint leaves
- 1/2 cup olive oil
- 2 cloves garlic, peeled
- 1/2 teaspoon black pepper
- 1 (16-ounce) package feta cheese, crumbled
- 3 tablespoons lemon juice
- assorted fresh vegetables, to taste, washed, for serving
Directions
Step 1 –In a food processor, add the parsley sprigs, the mint leaves, the olive oil, the garlic cloves, and the black pepper, cover, and pulse until they are finely chopped.
Step 2 –Add the feta cheese and the lemon juice to the parsley mixture, cover, and process until it is creamy.
Step 3 –Transfer the dip to a medium bowl with a lid and refrigerate until ready to serve.
Step 4 –Place the dip in a serving dish and serve with the assorted vegetables.
