Fennel Salad

Ingredients

For the salad:

  • 4 cups arugula, rinsed and dried
  • 1 cup Honeycrisp or Pink Lady apples, sliced
  • 1 cup fennel bulb, thinly sliced
  • 1/2 cup celery, thinly sliced
  • 1/2 cup candied pecans, roughly chopped
  • 2 tablespoons fennel fronds, optional, chopped

For the dressing:

  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon shallot, minced
  • 1 1/2 teaspoons Dijon mustard
  • 1 tablespoon honey
  • salt, to taste
  • black pepper, to taste

Directions

Step 1 –In a large bowl, add the arugula, the apples, the fennel, the celery, and the candied pecans and toss to combine.

Step 2 –In a small bowl, add the olive oil, the red wine vinegar, the minced shallots, the Dijon mustard, the honey, the salt, and the black pepper and whisk until well-combined.

Step 3 –Pour the dressing over the salad mixture and toss until it is well-combined.

Step 4 –Sprinkle the fennel fronds over the salad.

Step 5 –Serve immediately.
